Food tip of the day - Set a cracking base

When making biscuit bases for cheesecakes and slices, the easiest way to obtain a flat, even surface is to sprinkle the crumb mixture over the prepared pan. Then use the bottom of a drinking glass to press the mixture evenly over the pan. Put it in the refrigerator while preparing the filling - this will allow the crumb base to become firm.
