
1. Remove and discard crusts from white bread. Spread three slices with strawberry jam. Place remaining slices on top of strawberry jam to form three sandwiches. Cut each sandwich into three equal fingers.
2. Place the eggs in a small bowl and beat lightly.
3. Heat oil in a large frying pan over medium heat. Dip jam sandwich fingers in eggs until lightly soaked on both sides. Add to hot pan.
4. Cook, in batches, for about 2 minutes on each side, or until the fritters are golden and crisp.
5. Serve fritters dusted with sifted, icing sugar mixture.
Tip: You could use any flavour of jam in this recipe. Try apricot, plum, raspberry, marmalade or hazelnut spread.
