
1. Place cream cheese in a small bowl. Beat with an electric mixer until light and creamy. Add apricots and rind. Beat until combined.
2. Spread mixture over four slices of raisin toast. Spread remaining slices with marmalade. Sandwich cream cheese and marmalade slices together.
3. Heat a large frying pan over a medium heat. Spray generously with cooking oil. Add one sandwich. Cook for about 1 minute on each side,
or until golden and crisp. Remove. Cover to keep warm. Repeat with remaining sandwiches, respraying frying pan each time.
4. To serve, quarter sandwiches. Dust with sifted icing sugar mixture.
Tip: Any flavoured jam can be used instead of the marmalade. Cinnamon toast or any variety of bread can be substituted for raisin toast in this recipe.
