Curried Sausages

Ingredients
  • 8 thick beef sausages
  • 2 tblsps ghee
  • 2 medium brown onions, sliced
  • 4 cloves garlic, finely chopped
  • 1 tblsp curry powder
  • 200g button mushrooms, halved
  • 1 cup frozen peas
  • 375ml packet roast meat gravy
  • 1/2 cup water
  • Salt and pepper, to taste
  • Mashed potato and pappadums, to serve
  • Chopped fresh coriander, to garnish
Method
1 Place sausages in a medium saucepan and cover with water. Bring water to a simmer and then simmer, uncovered, for 5 minutes. Drain sausages from water and cool. Slice sausages diagonally into thin slices.

2 Melt ghee in a large frying pan. Add onions and cook, stirring, until golden brown. Stir in garlic, curry powder and sausages. Stir over heat until sausages are lightly browned. Stir in mushrooms, peas, gravy and water, and bring to boil. Simmer, uncovered, for 10 minutes or until heated through. Season with salt and pepper.

3 Serve curried sausages with mashed potato and pappadums. Garnish with chopped fresh coriander.
