Chorizo and Spinach Pasta

Ingredients
  • 500g uncooked pasta shapes of your choice
  • Sea salt
  • 80ml olive oil
  • 2 chorizo sausages, cut into thin slices
  • 3 medium ripe tomatoes, quartered
  • 250g baby spinach leaves
  • Freshly ground black pepper
Method
1 Cook pasta in boiling salted water until al dente. Drain and drizzle with oil to prevent sticking. Keep warm and place to one side.
2 Lightly oil a hot frying pan and add chorizo. Saute for 2 minutes or until lightly coloured. Add the tomatoes and toss the pan, reduce heat and place spinach on top. Put a lid on pan for 1 to 2 minutes or until the spinach wilts. Lightly toss or stir the pan, add the cooked pasta and mix well. Season with salt and pepper.
3 Divide pasta and spinach, tomato and chorizo mix over 4 bowls and serve immediately.
