Balsamic sausages with creamy mash

Ingredients
  • 2 regular oven bags
  • 2 tblsps plain flour
  • 3 onions, thinly sliced
  • 1 tblsp balsamic vinegar
  • 2 tblsps brown sugar
  • 1 tblsp chopped fresh thyme
  • 8 thin sausages
  • Extra fresh thyme, to garnish
  • Mashed potato:
  • 1kg desiree potatoes, peeled, coarsely chopped
  • 1 cup milk
  • 2 tblsps polyunsaturated margarine
  • Salt and pepper, to taste

1. Remove perforated strip from one of the oven bags. Add 1 tblsp of flour to bag and shake well to coat. Place onions, vinegar, sugar, thyme and sausages in bag. Close bag with tie. Place on an oven tray, making sure edges do not hang over sides of tray. Using a skewer or toothpick, pierce six holes in bag near tied end.
2. To make mashed potato, remove perforated strip from remaining oven bag. Add remaining flour and shake bag to coat. Place potatoes and milk inside bag. Close with tie. Place bag on an oven tray, making sure edges do not hang over tray. Using a skewer or toothpick, pierce six holes in top of bag near tied end. 3. Cook sausages in a hot oven (200C) for 10 minutes. Add potatoes to oven with sausages. Cook, for about 45 minutes, or until potatoes are tender. Remove sausages and potatoes from oven. Stand bags on trays for 5 minutes. Cut a slit in each bag, being careful to avoid steam.
4. Empty potato mixture into a large bowl. Add margarine. Mash until smooth. Season with salt and pepper.
5. Serve sausages and onions with mashed potato. Garnish with thyme.

Tip: Any flavoured sausages, such as beef, lamb, chicken or pork can be used. Try adding chopped thyme to mash.
