Marinara tomato linguine

Ingredients
  • 250g linguine
  • 2 tblsps olive oil
  • 1 onion, thinly sliced
  • 500g seafood marinara mix
  • 312g jar tomato chutney
  • 250g punnet cherry tomatoes, halved
  • 100g rocket leaves
  • Garlic bread, to serve

1. Add pasta to a large saucepan of boiling, salted water. Boil, uncovered, until tender. Drain. Cover to keep warm.
2. Meanwhile, heat half the oil in a large frying pan. Add onion. Cook, stirring, until soft. Set aside.
3. Heat remaining oil in same frying pan. Add seafood, in batches. Cook until lightly browned and just cooked through.
4. Return seafood, cooked onion, tomato chutney and cherry tomatoes to frying pan. Cook, stirring, for about 5 minutes,
or until heated through. Stir in warm pasta and rocket.
5. Serve pasta with garlic bread.

Tip: Seafood marinara mix is available from the deli section of supermarkets nationally.
