Ingredients
  • 500g white cabbage, coarsely chopped
  • 1 / 2 red onion, coarsely chopped
  • 1 carrot, coarsely chopped
  • Dressing:
  • 1 / 4 cup milk
  • 1 / 2 cup whole egg mayonnaise
  • 1 tblsp lemon juice
  • 1 tblsp white vinegar
  • 2 teaspoons Dijon mustard
  • 1 1 / 2 tblsps caster sugar
  • Salt and pepper, to taste

1. Place white cabbage and red onion, in batches, in food processor. Process until finely chopped. Transfer mixture to a large bowl.
2. Place carrot in food processor. Process until finely chopped. Add to cabbage mixture.
3. To make dressing, whisk all ingredients in a small bowl until thoroughly combined.
4. Add dressing to cabbage mixture. Stir until combined.
5. Refrigerate for about 1 hour before serving, to allow flavours
to fully develop.
