Tuscan chicken

Ingredients
  • 2 tblsps Tuscan seasoning
  • 2 tsps finely grated lemon rind
  • 600g chicken thigh fillets, trimmed
  • 400g green beans, trimmed
  • 250g cherry tomatoes, halved
  • Salt and pepper, to taste
  • Fresh parsley and lemon wedges, to garnish
  • Hummus mash, to serve

1.Combine seasoning and lemon rind in medium bowl. Add chicken. Toss to coat.
2. Place chicken in a single layer in large baking dish.
3. Cook in a hot oven (200C) for about 20 minutes, or until cooked through. Cut chicken into pieces.
4. Meanwhile, boil, steam or microwave beans until tender. Drain.
5. Cook tomatoes in a large, lightly oiled frying pan until just soft. Season with salt and pepper.
6. To serve, arrange chicken, beans and tomatoes on plates. Garnish with parsley and lemon wedges. Serve with hummus mash.

Tip: To make hummus mash, boil, steam or microwave 1kg peeled, chopped potatoes until tender. Drain. Mash with 1 / 2 cup hummus until smooth.
