Cherry Choc Chews

Ingredients
  • 1 cup self-raising flour
  • 1 cup icing sugar mixture
  • 125g butter, chopped
  • 1/3 cup hazelnut spread
  • Extra icing sugar mixture, to decorate
  • Topping
  • 1/4 cup plain flour
  • 2 tblsps cocoa powder
  • 3/4 cup caster sugar
  • 1/2 tsp baking powder
  • 2 eggs, lightly beaten
  • 1/2 cup glace cherries, coarsely chopped
  • 1/2 cup desiccated coconut
  • 1/2 cup finely chopped pecan nuts
Method
1. Grease a 19cm x 29cm rectangular slice pan and line base and sides with baking paper.
2. Sift flour and icing sugar into a large bowl. Rub in butter until mixture resembles breadcrumbs. Press into slice pan. Spread hazelnut spread over base.
3. To make the topping, sift flour, cocoa, sugar and baking powder into a large bowl. Stir in egg, cherries, desiccated coconut and nuts.
4. Spread topping over base.
5. Cook in a moderate oven (180C) for 30 minutes or until just firm and browned. Turn off oven and leave slice in oven with door ajar for 10 minutes, to cool, before turning onto a wire rack.
6. When slice is cold, cut into squares. Dust with extra sifted icing sugar mixture to serve.
