Ingredients
  • 125g butter, at room temperature
  • 2/3 cup caster sugar
  • 2 eggs
  • 1 1/2 cups self-raising flour
  • 2 tablespoons almond meal
  • 1/3 cup milk
  • 3/4 cup glace cherries, quartered
  • 1/2 cup sultanas
  • butter or margarine, to serve
Method
1. Grease a 14cm x 24cm loaf pan. Line base and sides with baking paper.
2. Place butter, sugar, eggs, flour, almond meal and milk in a small bowl. Beat with an electric mixer, on low speed, until ingredients are combined. Then beat on medium speed for about 2 minutes or until smooth. Stir in cherries and sultanas. Spoon mixture into prepared pan.
