Buttermilk Pancakes with Chocolate Sauce

Ingredients
  • 1 1/2 cups milk
  • 1/2 cup buttermilk
  • 125g unsalted butter, cut into small cubes
  • 2 cups plain flour
  • 1 tsp bicarbonate of soda
  • 1 tsp salt
  • Butter for frying
  • Hot chocolate sauce of your choice,
  • heated in microwave
  • Maple syrup, heated in the microwave
Method
1 In a medium-sized pot, heat the milk and buttermilk until just below boiling, then
add the butter and remove from heat. When the butter has melted add the flour, bicarbonate of soda and salt, and stir the mix to loosely combine the ingredients. You will find it is still quite lumpy.
2 Melt a little butter in a heavy-based frying pan and add about 1/3 cup of pancake mix. Allow to cook 1 to 2 minutes each side, or until the bubbles have burst and then carefully flip over and cook a further 1 minute on the other side. Remove from pan and keep warm to one side. Remember to lightly brush the pan with more butter in between cooking pancakes.
3 Divide the pancakes over four plates and place them in a stack. Pour over the heated chocolate sauce, maple syrup and lightly dust with icing sugar. Serve with fresh seasonal fruits on the side.
4 Serve immediately with or chocolate sauce or King Island cream and add a few fresh strawberries as a treat.

Does the recipe really call for the dry ingredients especially bi-carbonate of soda being added to the warm liquid mix? Or is the liquid mix allowed to cool to room temperature before the dry ingredients are added?
