Ingredients
- 50g butter
- 2 cups flour
- 2 tsps baking powder
- 1/2 cup milk
- 1 cup raspberry jam
- 2 apples, peeled and cut into thin slices
- 60g dates, finely chopped
- 60g sultanas
- 1/2 tsp mixed spice powder
- 1/2 tsp ground cinnamon
- Sauce
- 1 tblsp butter
- 3 tblsps sugar
- 1 cup water
Method1 Preheat your oven to 180C.
2 In a medium bowl, rub the butter into the flour, add the baking powder and gradually pour in the milk to make a firm dough.
3 Roll the dough out onto a lightly floured surface and spread with jam. Then top with apples, dates and sultanas sprinkle over the spices.
4 Carefully roll up into a log shape and place into a shallow sided baking dish.
5 Place all sauce ingredients into a small pot and bring to a boil. Pour over the log and place into the oven for 45 minutes or until the pudding is cooked through and the sauce has thickened.
6 Serve immediately with fresh cream.
