Kids' cooking class - Party time!

Ingredients
  • Sushi sandwich rolls:
  • 6 slices white bread, crusts removed
  • 2 tblsps mayonnaise
  • 100g shaved leg ham
  • 6 x 10cm long sticks tasty cheese
  • 1 small carrot, grated
  • 1 cup finely shredded iceberg lettuce
  • Earthworm mudcake:
  • 250g packet Choc Ripple biscuits
  • 250g block cream cheese, at room temperature
  • 1 tblsp brown sugar
  • 1 cup Dark Choc Melts, melted
  • 1 cup sultanas
  • 180g packet sour worm lollies
  • Vanilla ice-cream, to serve
  • Popcorn snack mix:
  • 1 / 4 tsp vegetable oil
  • 1 tblsp popping popcorn
  • 1 cup pretzels
  • 1 cup Ajitas Vege Chips
  • 1 / 2 cup Smarties
  • 1 / 2 cup sultanas
  • 1 / 2 cup halved dried apricots

Sushi sandwich rolls:

1. Using a rolling pin, roll bread slices thinly.
2. Spread one side of each slice of bread with mayonnaise. Arrange shaved leg ham, in a single layer, over mayonnaise. Divide cheese, carrot then lettuce over ham at one end. Roll-up each one tightly to enclose filling. Trim both ends of each roll. Cut rolls in half.
3. Serve rolls for lunch or as a snack.

Makes: 12, Prep time: 15

Tip: For a change, spread mashed avocado over bread instead of mayonnaise

Earthworm mudcake:

1. Grease an 18cm round springform cake pan (base measures 20cm). Line base and side with baking paper.
2. Place packet of Choc Ripple biscuits into a large snap-lock bag. Remove air and seal bag. Using a rolling pin, crush biscuits until coarsely chopped. Transfer to a large bowl.
3. Beat cream cheese and sugar in a small bowl with an electric mixer until smooth. With motor operating, beat in melted chocolate until combined. Transfer mixture to bowl with crushed biscuits. Add sultanas. Stir until well combined.
4. Using your hands, push chocolate mud mixture firmly into a prepared pan. Using the tip of your finger, make small holes over top of cake. Insert sour worm lollies into holes. Refrigerate for 1 hour, or until firm.
5. To serve, remove side from pan. Transfer cake to a serving plate and stand 10 minutes before cutting. Serve with scoops of vanilla ice-cream.

Prep: 15 mins

Tip: If you have a lot to do on the day of the party, you'll love this cake as it can be made up to five days ahead. Keep, covered, in refrigerator.

Popcorn snack mix:

1. Heat oil in a large pan until hot. Add popping corn. Cover pan and cook until popping slows down to about to one to two pops per second. Remove and stand pan, covered, for 2 minutes before transferring to a large bowl. Cool. You'll need 1 cup of popped corn for this recipe.
2. Add pretzels, Vegie Chips, Smarties, sultanas and dried apricots. Mix well.
3. Serve in small bowls for parties or small bags for lunch boxes.

Tip: Any combination of dried fruits, such as pears, bananas or peaches, or rice crackers, small savoury biscuits or mini-cookies can be used
