Chicken chilli burger

Ingredients
  • 150g chicken breast fillet
  • Canola oil or olive oil spray or 2 tsps extra virgin olive oil
  • 1 wholegrain roll
  • 1/2 carrot
  • Shredded lettuce
  • 2 slices canned beetroot
  • 1 medium tomato
  • Seasoning, as desired
  • Thai sweet chilli sauce
Method
1 Flatten chicken breast with mallet. Heat oil in a frying pan then cook the chicken. Set aside.

2 Toast wholegrain roll. Slice carrot with a vegetable peeler. On half of the roll, place lettuce, beetroot, tomato and chicken. Season, drizzle with Thai sweet chilli sauce and add carrot.

3 Top with remaining bread roll half to serve.
