Chocolate afghans

Ingredients
  • 220g butter
  • 1/2 cup caster sugar
  • 1 cups plain flour
  • 2 tblsps cocoa powder
  • 3 cups cornflakes
  • Dark chocolate for icing if desired
  • Pecans to garnish if desired
Method

1 Preheat your oven to a moderately hot 180C.
2 Using your food processor, cream together the butter and sugar until it turns a nice white colour. Add the sifted flour and cocoa and combine well. Then, using a wooden spoon, add the cornflakes and mix until it is well combined.
3 Roll out into balls the size of 20 cent pieces and gently press together. Place onto a lightly greased, paper-lined tray and bake in the oven for 15 to 20 minutes or until cooked through.
4 Remove afghans from oven and cool on a cake rack.
5 When at room temperature, simply melt some dark chocolate in the microwave and spoon a little over each afghan and top with a pecan or other nut of your choice.

These are THE best! I have passed this on to so many who agree. Can be done with self raising flour and home brand cornflakes too
