Chocolate Date Cake

Ingredients
  • 300g packet silken firm tofu, chopped
  • 1/4 cup honey
  • 1/2 cup brown sugar
  • 1 1/2 cups soy milk
  • 2 1/2 cups self-raising flour
  • 1/2 cup cocoa powder
  • 1 cup chopped and pitted dried dates
  • Frosting
  • 1 cup chopped and pitted dried dates
  • 1/2 cup water
  • 1 tblsp cocoa powder
Method
1 Grease a deep 20cm round cake pan and line the base and side with baking paper.

2 Process tofu, honey, brown sugar and soy milk until smooth. Transfer mixture to a large bowl and stir in the sifted flour and cocoa then the dates. Pour mixture into the prepared pan.

3 Cook in a moderate oven (180C) for about 1 hour, or until cooked when tested. Remove from oven and stand cake in its pan for 5 minutes before turning onto a wire rack to cool.

4 To make the frosting, place all ingredients in a small pan. Bring to the boil then simmer, covered, for 2 minutes. Remove pan from heat and carefully transfer the mixture to a food processor. Process until smooth.

5 Using a serrated knife, trim the top off the cake so it's level. Spread frosting over the top of the cake and serve.
