| Serves 4; Prep: 10 mins; Cook: 20 mins; Nutritional Value: Low-fat Method Combine potato chips and celery salt in a shallow baking dish. Spray with cooking oil. Cook in a very hot oven (240C) for 20 minutes or until browned all over, turning during cooking. Meanwhile, cook pork, in batches, in a lightly oiled non-stick frying pan until brown. Remove from pan and keep warm. Melt spread in same pan. Add lemon juice, capers, dill and consommé. Stir until heated through. Serve pork with potato chips and baby spinach leaves. Drizzle with lemon sauce. | |
