| Serves 6; Prep: 15 mins; Cook: 20 mins; Nutritional Value: Low-fatĀ Method Coat veal in Cornflake crumbs. Spray a large heated non-stick frying pan with cooking oil. Cook veal, in batches, until browned on both sides. Remove from pan. Place veal onto an oven tray. Spread pasta sauce evenly onto veal. Top with eggplant, ham and then sprinkle with cheese.
