Chilli Chicken Skewers

Ingredients
* 600g Fresh Chicken Thigh Fillets Skin Off, quartered
* 2 large red capsicums, cut into 3cm cubes
* 1/2 x 35g sachet Old El Paso Taco Seasoning
* 2 large corn cobs
* 1/4 small avocado, finely chopped
* 3 green spring onions, finely chopped
* 250g grape tomatoes, halved
* 200g jar Old El Paso Mild Taco Sauce
* baby rocket leaves, to serve

Serves 4; Prep: 20 mins; Cook: 15 mins; Nutritional Value: Low-fat

Method

Thread chicken and capsicum onto 8 bamboo skewers. Sprinkle evenly with taco seasoning. Char-grill skewers until browned all over and cooked through.

Meanwhile, char-grill corn cobs until browned all over. Using a small sharp knife, cut corn from cobs. Combine corn and remaining ingredients in a medium bowl.

Serve skewers on salsa. Serve with baby rocket leaves.
