| Serves 4; Prep: 15 mins; Cook: 15 mins; Nutritional Value: Low-fat Method Place broad beans in a large heatproof bowl. Pour over boiling water and stand 2 minutes. Drain and peel beans. Boil potatoes until tender. Drain well. Return potatoes to pan. Add broad beans and soy milk. Press down on potatoes with a potato masher to flatten. Meanwhile, combine lamb and mint sauce. Char-grill lamb and tomatoes until browned all over and lamb is cooked as desired. Serve lamb and tomatoes with potato smash. Drizzle with extra mint sauce. | |
