Serves: 4 Method Place the thin beef strips into a bowl and add all the marinade ingredients. Combine well, cover and refrigerate until required. Place the noodles and all the vegetable ingredients into a large mixing bowl and using a gentle hand, combine well. Prepare the dressing by combining all the ingredients well. Using a carving fork, place it into the noodle mix and turn gently until you have formed a neat round stack around the tongs. Place onto a serving plate. Heat a heavy based griddle pan, add a little EVOO and quickly sear the beef strips. Place around the noodle mix and cover the noodle mix well with the dressing mix. Finish with some extra chopped peanuts and coriander leaves. | |
