Marinara Risotto

Ingredients
* 2 teaspoons olive oil
* 1 chopped onion
* 2 cloves crushed garlic
* 1 1/2 cups Arborio rice
* 3/4 cup dry white wine
* 3 cups Campbells Real Chicken Stock
* 410g can Ardmona Thick and Rich Finely Chopped Tomatoes
* 500g marinara mix
* 420g can drained Edgell Peas
* 1/4 cup chopped parsley
* 1 tablespoon grated parmesan 

Serves 4; Prep: 10 mins; Cook: 25 mins; Nutritional Value: Low-fat

Method

Heat 2 teaspoons olive oil in large non-stick pan. Cook 1 chopped onion and 2 cloves crushed garlic. Add 1 1/2 cups Arborio rice. Stir 1 minute. Add 3/4 cup dry white wine, simmer 1 minute. Stir in 2 cups Campbells Real Chicken Stock. Simmer, covered, 10 minutes, stirring occasionally. Add another 1 cup stock and 410g can Ardmona Thick and Rich Finely Chopped Tomatoes. Simmer, covered, 10 minutes, stirring occasionally. Add 500g marinara mix and 420g can drained Edgell Peas. Cook, covered 3 minutes or until seafood is cooked through. Stir in 1/4 cup chopped parsley and 1 tablespoon grated parmesan.
