Boil 1kg peeled and chopped potatoes. Drain well. Mash potatoes with 310g can Edgell Creamed Corn and 2 tablespoons chopped chives. Spray large non-stick pan with cooking oil. Cook chicken until browned all over and cooked through. Serve chicken on mash. Top with salsa of 1 finely chopped tomato and 1/2 small finely chopped red onion. | |
