| Method Serves: 6 Cut 1 cm off the tomato top, carefully scoop out and discard the seeds and pulp. Combine together the char siu sauce and olive oil and coat the diced pumpkin and full onion slices. Place them onto a baking paper lined oven tray and bake at 185°C until golden. Remove from the oven, add the parsley to the pumpkin and place the mix into the tomatoes, Bake for 5 minutes and present on the red onion slices finishing with a little extra virgin olive oil.
