| Serves 4, Preparation Time: 10 minutes, Cooking Time: 10 minutes Method Pre-heat oven to 200C (fan forced) Place pine nuts on oven tray and cook in oven for 1 minute or until golden Squeeze excess water out of spinach and combine spinach with crumbled feta, ricotta, nutmeg and pine nuts in a bowl Take one sheet of filo pastry and oil one side, fold in half lengthways. Place teaspoonfuls of mixture along bottom of Filo sheets and roll to form a sausage shape Place parcels to form a continuous spiral on an oiled oven tray, and brush tops with oil. Could you please tell me or explain to me further the way you make these spanakopita as the picture does not seam to match the instructions. If you roll to make like a sausage roll then how do you achieve the filo on bottom and the mixture on top like the picture.

Just so you know, I've just seen this episode and the stuff on top is a salad that they made to top the spanakopita.

I just watched the episode too,.. what you do is combine the mixture, wrap like a sausage roll and twist the rolls around on a tray to make the spirl shape, then mix the ingredients for the salad and place on the top for decoration and extra flavouring after the spanakopita has been cooked.
