Anzac Cookies

Ingredients
* 1 litre good quality ice cream, softened
* 1 teaspoon ground wattleseed (or cinnamon)
* 1 cup plain flour, sifted
* 1 cup rolled oats
* 1 cup desiccated coconut
* 3/4 cup brown sugar
* 125g butter, chopped
* 2 tablespoons golden syrup
* 1 teaspoon bicarbonate of soda
* 2 tablespoons water
Method

Combine softened ice cream and wattleseed and re freeze until required.

Place flour, oats, coconut and sugar in a bowl.

Place butter and golden syrup in a saucepan and stir over low heat until melted. Remove from heat. Combine bicarbonate of soda and water in a small bowl and stir into golden syrup mixture. Add immediately to flour mixture and stir until well combined.

Roll mixture into 12 balls and place onto paper lined baking trays, allowing room for spreading.

Bake at 180C for 12-15 minutes or until golden. Allow biscuits to cool completely on trays.

Sandwich each biscuit together with a scoop of wattleseed ice cream and a second biscuit, before serving.

TIP
Biscuits will keep for 3 days in an airtight container

That's probably how the Americans have em as 'Anzac cookies' They are a spin of of the originals...Look how they are all buttered up and don't look anything like Anzac biscuits...

I was annoyed, no outraged, when I logged on and saw your recipe "Anzac Cookies" and very happy to see that I'm not the only one. Hell !! we have to endure American spelling on everything so that it becomes the norm, but Anzac Cookies? Enough's enough - they're biscuits!! and if the yanks get confused that we might mean scones, then too bad!!

Oh dear god get over it. Cookies, biscuits. Stop being so damn picky and grow up. You call it whatever you call it.
Those biscuits probably taste real good too. And if you don't want ice cream, don't use ice cream, or go find another recipe.

Cookies are eaten by Americans!!!

I does not come any more Australian than ANZAC BISCUITS, so treat them (the ANZACS) and our language (Australians use BISCUITS) with respect.

As for the ice-cream, no thanks. However, if you like ice-cream with your ANZAC BISCUITS then call it an ANZAC BISCUIT SLICE.

carrieprettejohn totally agree with you massive headache now, there freakin food who cares! and if they had of called them a fresh take on anzac BISCUITS you would all be complaining about taking an aussie icon and changing it to something else.
