Pizza's at Home

Ingredients
Pizza Dough
* 2 x 7g sachets dried yeast
* 1 teaspoon honey
* 300ml tepid water
* 500g flour
* a pinch of salt
* extra flour for dusting
Kid's Special Topping
* 1/2 cup tomato sugo
* 250g mozzarella cheese, sliced
* 10 thin slices ham
* 1/4 bunch fresh basil leaves (optional)
Fresh Tomato, Olive, Goat Cheese & Rocket Topping
* 6 tomatoes, halved, deseeded & finely chopped
* splash olive oil
* dash red wine vinegar
* freshly ground pepper & salt
* 10 thin slices proscuitto
* 1/2 cup black olives, deseeded
* 120g goat cheese
* shaved parmesan cheese
* 2 handfuls of rocket
* extra olive oil and red wine vinegar to dress rocket
Method

Prepare Pizza dough:

Dissolve sachets of yeast and honey in half the tepid water and set aside for a few minutes.

Place flour and salt in the bowl of a mixer which has been fitted with the dough hook attachment. Start machine on low and slowly add the dissolved yeast liquid whilst mixing. Add the remaining tepid water to the flour and continue to mix until all the flour is incorporated and forms a moist dough. You may need to adjust the amount of water by adding a little more or a little less depending upon the quality of flour.

When the dough is formed, continue to beat for a further 2 or 3 minutes, this will take the place of kneading the dough. Turn off machine and remove dough hook.

Meanwhile, prepare a large oven tray by oiling with olive oil and then lightly dusting with flour. Set aside.

Generously dust a large work surface with flour and transfer the dough to the bench. Divide dough into two, and roll the first portion of dough into a long thin sheet approximately 50cm x 30cm and no more than 1 cm thick.

Transfer the rolled-out dough to the prepared baking tray. You may need to pull the dough back into a neat shape after transferring it from the bench. Repeat with the remaining portion of dough and set along side on baking tray.

Prepare toppings:

For the Kid's Special:

Smear pizza dough with a thin layer of tomato sugo and lay slices of ham randomly across the top. Place slices of mozzarella cheese on top of ham and sprinkle with fresh basil leaves.

For the Fresh Tomato, Olive, Goat Cheese and Rocket:

  • Toss chopped tomatoes in a bowl with a splash of olive oil and red wine vinegar and season to taste with freshly ground pepper & salt. Evenly spread the tomatoes over the pizza base and sprinkle with olives. Add sliced proscuitto and roughly broken chunks of goat cheese. Season with a little extra pepper & salt to taste.
  • Place topped pizza's in a hot, preheated oven of 250C and bake for approximately 15 minutes or until pizza base is lightly browned and the pizza bottom crisp.
  • Meanwhile, lightly dress rocket leaves with olive oil and red wine vinegar.
  • Slice pizza into pieces, top with rocket leaves and serve immediately.
