Spiced Cajun Wings with Lime

Ingredients
* 12 chicken wings
* 1/2 - 3/4 teaspoon cayenne pepper
* 3/4 teaspoon ground coriander
* 3/4 teaspoon cumin
* 1 tablespoon garlic powder
* 1 teaspoon dry mustard
* 2 teaspoons Spanish Paprika
* 3/4 teaspoon dried thyme
* 1 teaspoon salt
* 1 tablespoon plain flour
* rind and juice of 2 limes
* light sour cream, for serving
Method

Preheat oven to 190oC.

Combine cayenne pepper, coriander, cumin, garlic powder, mustard, paprika, thyme, salt, flour and lime rind.

Place chicken wings in a large plastic bag, add spice mixture and shake until evenly coated.

Arrange chicken wings in a baking dish and bake for 30-35 minutes, until the skin turns a deep brown colour and is crisp.

Squeeze lime juice over the wings and serve with sour cream.

TIPS:

  • Use chicken fillets cut into thick strips as an alternative.
  • Full of flavour and perfect to have with drinks.
  • Reduce the amount of cayenne pepper for younger taste buds.
  • Make up and store spice mixture in an airtight container, up to 2 weeks, but remember not to add lime rind to it, as lime flavour will diminish during storage.
