Fruit Skewers with Marshmallow and Yoghurt Sauce

Ingredients
* 100g white marshmallows, chopped
* finely grated rind of 1 lemon
* 1 and 1/2 tablespoons lemon juice
* 200g tub fruit yogurt (mango, passionfruit, berry etc
* 1/2 cup thickened cream
* seasonal fruit, cut into cubes and skewered
Method

Combine marshmallows, lemon rind and juice in a non stick saucepan. Cook, stirring continuously over low heat until the marshmallows have melted. Cool slightly.

Gently combine yogurt and cream and stir cooled marshmallow mixture through mixture. Chill. Serve with fruit or fruit skewers.

  • A healthy and colourful fruit idea that will appeal to children also.
  • Use fruit in season
  • Can also be enjoyed as part of a fruit platter or as an accompaniment to a fruit salad
