![]() | Ingredients * 50g unsalted butter * 50ml extra virgin olive oil * 2 leeks, washed well and finely sliced * 2 cloves garlic, finely chopped * 2 small red chillies, seeded and finely chopped * 100ml vodka * 150ml fish stock * freshly ground pepper and salt * 500g spaghettini or spaghetti pasta * 340g can crabmeat, drained * freshly shaved parmesan and handful of chopped flat-leaf parsley |
Method In a large frying pan, melt butter and add oil, saute leeks, garlic and chillies until leeks are tender. Add vodka to deglaze pan then add fish stock, season to taste with freshly ground pepper & salt and continue to cook down to a creamy consistency. Meanwhile, cook pasta in plenty of salted boiling water until al dente. Drain. Toss drained pasta with the leek sauce, crab meat and parmesan cheese.
