Method Prepare salsa: Combine all the salsa ingredients in a bowl, and combine gently using a fork - but don't overwork, otherwise the mango will become mushy. Heat a large grill plate until hot. Meanwhile, rub salmon fillets with olive oil and season with freshly ground pepper and salt. Place salmon in the hot pan skin side down and sear salmon for approximately 2 minutes until skin is lightly browned and slightly crispy. Turn salmon and cook other side for 1 minute only. Remove from heat and place on a serving plate. The fish should be cooked on the outside but still rare on the inside. Serve with a spoon full of salsa on top of the salmon and a little extra to the side. Garnish with extra coriander and serve immediately. TIP: This dish is equally good cooked on the BBQ or in a pan. Fish should only be cooked for as long as you would cook a piece of toast never over cook it or it will become quite dry and rubbery in texture. Food 4 Life: Thursday, 5th April 2007 | |
