Serves 4
150g vanilla fudge
200g dark chocolate, chopped
300ml tub of double thick cream
8 James Road Chocolate Fudge Cookies
500ml tub Serendipity vanilla bean ice-cream
- Scoop ice-cream onto 4 cookies, then sandwich together with remaining cookies.
- Place the ice-cream sandwiches on a tray and keep them in the freezer until ready to serve.
- For the sauce, place fudge, chocolate and cream into a small pan and gently cook over a low heat for 5-7 minutes, stirring occasionally until all the fudge and chocolate has melted together.
- Leave to cool, then pour over the top of each ice-cream sandwich and serve.
