Makes 30 cookies
Ingredients
1½ cups plain flour
1 tsp bicarbonate of soda
½ tsp baking powder
1 cup rolled oats
¾ cup dried cranberries
¾ cup white chocolate bits
½ cup brown sugar
½ cup white sugar
¾ cup roughly chopped macadamias
2 eggs, beaten
125g unsalted butter, melted
2 tsp vanilla extract
Method
1. Preheat oven to 180°C. Sift flour, bicarb and baking powder into a large bowl. Add remaining dry ingredients, combine and make a well in the centre. Add eggs, butter and vanilla. Mix until combined.
2. Line three oven trays with baking paper. Roll heaped tablespoons of mixture into balls and put on trays 5cm apart. Bake for 12-15 minutes or until lightly golden. Cool for 15 minutes, then transfer to a wire rack.
Gifting suggestion:
A jar of dry cookie ingredients makes a sweet gift. To assemble, sift flour, bicarb and
baking powder into a bowl, then spoon into a 1.25L jar. Layer oats on top, then cranberries, white chocolate bits, brown sugar, white sugar and macadamias. Download cookie jar label. Seal the jar and decorate with the label and a tag detailing baking instructions.
