Seared tuna with Lime dipping sauce

Tuna

 

Preparation time: 45 mins
Cooking time: 5 mins
Serves 4

Juice of 2 limes
2 Tbsp sweet chilli sauce
1 Tbsp light soy sauce
4 x 200g tuna steaks
2 tsp olive oil
Extra lime, very finely sliced
3 lebanese cucumbers,
peeled into ribbons

LIME DIPPING SAUCE
3 Tbsp fresh lime juice
2 Tbsp rice wine vinegar
1 Tbsp sweet chilli sauce
2 tsp sesame oil
2 tsp fish sauce

1 Combine the lime juice, sweet chilli sauce and light soy sauce in a ceramic dish. Add the tuna and turn over in the marinade to coat well. Put in the fridge and leave to marinate for 30 minutes.

2 To make Lime dipping sauce: Mix all the ingredients together.

3 Remove the tuna from the marinade. Heat a large frying pan over a high heat. Add the olive oil. Cook the tuna for 1 minute on each side, or until cooked to your preference. Finely slice the tuna. Divide the tuna and finely sliced lime among serving plates. Top with the cucumber and drizzle with the dipping sauce.
