Mortadella is a traditional Italian sausage, originating in the north of the country. In Australia it’s mostly used sliced for sandwiches, however, as with all salami, it’s suitable for cooking as well.
Lamb kofte with tabouleh
Kofte is a traditional-style meatball that’s eaten in Turkey, Armenia, Romania and Macedonia. It can be made from any type of meat, but lamb is the most popular. Lamb mince is available from butchers and is usually cheaper than premium beef mince. n There are five spices needed to make a blend known as baharat for the mince mixture. All five are available at supermarkets.
