Herbs need
In general, herbs like plenty of sunshine, good, well-drained soil and occasional fertilising.
Basil and chives like generous feeding and regular watering, while bergamot and the various mints prefer to be kept continuously moist.
Where to grow them
A traditional herb garden is a geometrically laid out plot in a large garden. However, most herbs grow well in pots on a sunny balcony or in a window box that gets fresh air and sunshine. Herbs from Mediterranean areas, such as lavender and thyme, do best in terracotta pots. Asian herbs, such as Vietnamese mint, like more water and prefer plastic pots.
Picking herbs
Gather herbs just when they are coming into flower. Use them fresh or dry them by spreading them out on a table in the shade or hanging them upside down in bunches.
Microwave drying
To dry herbs in the microwave: spread them on a paper towel, cover them with another and zap them on full power for a minute or two.
If they aren't completely dry, give them a little more time with the top towel off.
