Frozen chocolate ice-cream pie

Stand a container of Peters Smooth & Creamy French Vanilla Flavour ice-cream in the fridge for 20 minutes or until soft but not melted.

Put a packet of chocolate-flavoured plain biscuits in a food processor; process until crumbs form. Melt 90g butter, stand for 2-3 minutes, then add to crumbs. Process until well combined. Spoon crumbs into a 23cm pie dish and press down with the back of a spoon.

Put dish in freezer. Mix ΒΌ cup warm water, 2 tablespoons cocoa and 2 teaspoons peppermint essence, stir until smooth. Put ice-cream in a bowl, add cocoa mixture and stir to combine. Spoon into crumb-lined dish; freeze for 3-4 hours or until firm. Stand pie for 10 minutes before serving.
