Peas and chicken baked in paper

Ingredients
  • 4 chicken breast fillets
  • 1 tray or bunch enoki mushrooms
  • 4 spring onion bulbs, thinly sliced
  • 8cm-piece ginger, shredded
  • 1¹â3 cups frozen peas
  • 4 Tbsp teriyaki sauce
  • 2 Tbsp mirin
1 Preheat oven to 180°C. Tear off eight 30cm pieces of baking paper. For each parcel, lay 2 sheets together on a flat surface. 2 Put a breast fillet on each double layer of baking paper. Top each with an equal portion of enoki mushrooms, spring onion, ginger and ¹⁄3 cup peas. Drizzle combined teriyaki and mirin evenly over the top of each. 3 Bring tops of paper together and fold over a few times, then fold in sides and tuck under, securing with string. Put prepared parcels on an oven tray and bake for 20-25 minutes.
