1 Preheat oven to 200°C. Line 2 oven trays with baking paper. Chop the potato coarsely and put on 1 of the prepared trays. Spray with olive oil and sprinkle with salt. Put the tray on the top shelf
of the oven and bake for 25 minutes or until potato is golden. Cool.
2 Peel and devein the prawns, leaving tails intact. Put the parmesan in a shallow dish and coat each prawn with cheese, gently pressing on with your fingers. Put in a single layer on the second prepared tray. Bake for 8-10 minutes or until prawns turn orange and the cheese is golden.
3 Put snow peas in a bowl, cover with boiling water and stand for 1-2 minutes or until bright green and just tender. Drain and rinse under cold water, then transfer to a large bowl. Add the watercress, cold potato, olive oil, vinegar and oregano and toss to combine. Spoon onto a large platter and
top with the prawns.
Serve immediately.
