Honey soy ribs

Ingredients
  • 6 pork ribs
  • 1 brown onion, sliced
  • 4 Tbsp light soy sauce
  • 100ml oyster sauce
  • 1 cup Chinese rice wine
  • 4cm-piece fresh ginger,
  • finely sliced
  • 4 garlic cloves, smashed
  • 1 cinnamon stick
  • 1½ tsp Chinese five-spice
  • powder
  • 4 Tbsp honey
  • 2 long red chillies, sliced
  • on the angle
  • 1 tsp dried chilli flakes
  • 1 bunch coriander, leaves
  • picked, to serve
  • Steamed or fried rice,
  • to serve

1 Preheat oven to 170ºC. Put ribs in a large ovenproof stove-top casserole or baking dish. Put onion, soy, oyster sauce, rice wine, 1 cup of water, ginger, garlic, cinnamon, five-spice powder, honey, chilli and chilli flakes in a medium mixing bowl and stir to combine. Pour the sauce mixture over ribs and bring to a simmer over a medium heat.

2 Cover dish and put in the oven. Cook ribs for 1½ hours. Increase the oven temperature to 200ºC, uncover dish and cook for 5-8 minutes or until ribs are browned.

3 Remove dish from oven and set ribs aside. Skim any fat from the liquid and discard the fat. Bring liquid to the boil and cook over a high heat until reduced and syrupy. Spoon the liquid over the ribs, scatter with the coriander leaves and serve with steamed or fried rice.
