Palascinta torta - here's how:
1 Put eggs, vanilla and milk in a bowl and whisk. Whisk in caster sugar, then sift in the flour and cocoa. Whisk until smooth.
2 Heat a non-stick crepe pan. When hot, add 2-3 tablespoons of egg mixture and swirl to cover the pan. Cook on each side for 1-2 minutes, then turn out on a plate. Repeat until all the mixture has been used. Put ricotta and brown sugar in a bowl and mix to combine, then fold in banana.
3 Spread ricotta mixture over a crepe, then repeat this process to form a crepe stack. Dust the torta with icing sugar. Serve with ice-cream, if desired.
