Lamb kofte with taboulet

Ingredients
  • 1 slice white bread
  • 3 garlic cloves
  • 1/4 bunch coriander, finely chopped, reserve the roots
  • 2 tsp coriander seeds
  • 1 tsp cumin seeds
  • 1/2 tsp ground cloves
  • 1/2 tsp nutmeg
  • 1 tsp smoked paprika
  • 2 tsp salt
  • 600g lamb mince
  • 1/2 brown onion, very finely diced
  • Tabouleh
  • 250g couscous
  • 1 Tbsp butter
  • 1 cup boiling water
  • 1 red onion, very finely diced
  • 2 garlic cloves, minced
  • 2 bunches parsley, finely chopped
  • 1/2 bunch mint, finely chopped
  • Finely grated rind and juice of 1 lemon
  • 2 egg tomatoes, seeded, finely diced
  • 4 Tbsp plain yoghurt

These traditional meatballs are a fantastic yet easy meal to offer your guests. They're the main course in 'Fast' Ed's dinner party challenge. Get the dinner party recipes

1 Soak bread in a little water, squeeze out excess, then tear bread into small pieces. Use a mortar and pestle to pound the garlic, coriander roots, seeds, spices and salt. Put mince, onion, coriander, bread and spice mixture in a bowl and mix to combine. Shape mixture into small balls and put each onto a skewer. Barbecue until cooked.

2 To make Tabouleh: Combine couscous, butter and boiling water in a heatproof bowl and put on the barbecue for 5 minutes, stirring occasionally with a fork. Combine couscous mixture, onion, garlic, herbs, rind, juice and tomato, then season.

3 Put 2-3 skewers on a bed of tabouleh on individual plates with a drizzle of yoghurt.
