Jam Rollettes

Ingredients
  • 8 eggs
  • 250g caster sugar
  • 1 tsp vanilla extract
  • 160g plain flour, sifted
  • 3 Tbsp melted butter
  • 1 cup raspberry jam, whipped
  • 1 cup vanilla frosting
  • 2 Tbsp pure sifted icing sugar, for dusting

1 Preheat oven to 200ºC. Line 2 baking trays with baking paper. Put the eggs, sugar and vanilla in a bowl and beat with an electric mixer for 8-9 minutes or until mixture has increased in volume and is very thick and a pale yellow colour.

2 Add flour and butter and carefully fold into the egg mixture. Divide the mixture between prepared trays and spread evenly. Cook for 8-9 minutes or until sponges are just golden. Remove sponges from oven and immediately cover each with a tea towel for 2 minutes.

3 Turn out each sponge onto a baking-paper-lined tea towel and spread with a layer of whipped jam, then with a layer of frosting. Use the tea towel to help you lift the sponge as you roll it up tightly. Dust each rollette with icing sugar. Cut into slices to serve.

well I read the recipe verryyyyy carefully and I still can't see the cream or sour cream !!!

thats because there is no sour cream or cream in it!!!!! Its uses vanilla frosting Betty Crocker make a nice one, find it in the supermarket near the icing sugar.

how do you whip jam? the same as cream?

THE CREAM HE USED ISN'T OR WASN'T CREAM HE USED PRE-MADE VANILLA ICING.
aND YOU PUT TEH JAM IN TEH MICROWAVE FOR A FEEW SECONDS THEN STIR ITM SO IT IS AN EVEN CONSISTENCY.

He used vanilla, cream cheese and icing sugar. BUT not how much. So I guess we make it to the consistancy of cream.

I found this recipe tricky. My sponges was slightly overcooked by a minute when I made this. I didn' t whip the jam it came out in thick clumps from jar and when try to spread it made the roll too thick! I did use BC frosting I think it was far too sweet with the jam. Any one else have problem?
