Orange and lime butter cake with Chocolate Vienna frosting

Ingredients
  • 125g butter, softened
  • 1/2 cup caster sugar
  • 1 tsp vanilla extract
  • Finely grated rind and
  • juice of 2 oranges
  • Finely grated rind and
  • juice of 1 large lime
  • 2 eggs
  • 1 1/2 cups self-raising flour, sifted
  • CHOCOLATE VIENNA FROSTING
  • 250g butter, at room temperature
  • 1/2 cup pure icing sugar,
  • sifted
  • 2 Tbsp cocoa, sifted

Here's how:

1 Preheat oven to 180ºC. Lightly grease and line the base and sides of 2 x 8cm round cake pans with baking paper. Cream the butter, sugar, vanilla, and orange and lime rind in the small bowl of an electric mixer until the mixture is light and fluffy. Beat in the eggs, one at a time, until well combined. Stir in half the flour and ¼ cup orange juice, then stir in remaining flour and ¼ cup lime juice.

2 Spoon mixture into prepared pans. Bake for 45 minutes or until cakes are cooked in the centre when tested with a skewer. Stand for 5 minutes before inverting onto a wire rack to cool. When cold, spread the cakes with Chocolate Vienna frosting.

3 To make Chocolate Vienna frosting: Using an electric hand beater, beat the butter in a bowl until it becomes white in colour. Slowly add combined icing sugar and cocoa, 1 tablespoonful at a time, until well combined and icing is soft and spreadable.
