Asparagus baked with prosciutto

Ingredients
  • 2 bunches asparagus
  • 12-15 slices prosciutto
  • 1 slice rye bread,roughly chopped
  • 40g butter, melted
  • 1/3 cup roasted hazelnuts,roughly chopped
  • 75g Blue Castello cheese, crumbled

Try this simple yet effective meal for a lovely way to eat asparagus.

Here's how: 

1 Preheat oven to 200°C. Trim about 2cm from the end of the asparagus. Wrap a prosciutto slice around each asparagus stalk, then arrange the prosciutto-wrapped asparagus in an ovenproof dish.

2 Process bread in a food processor until breadcrumbs form. Transfer to a bowl. Add butter to breadcrumbs and toss until well combined. Add hazelnut and cheese to the breadcrumb mixture and toss to combine. Sprinkle breadcrumb mixture across the middle of asparagus. Bake for 10 minutes or until crumbs are golden.

Just the name of the recipe sounds good and looks delicious too.
Would like to try this, and though I really like cheese, I
have not eaten Blue Castello cheese, what would that be like., hmmm. Then again one could always subsitute the blue cheese with another flavoursome cheese.

I grilled prosciutto seperately, until crispy. Cooked Asparagus. Then made breadcrumbs and cheese as per receipe but put into a seperate baking dish to brown until crisp. Then put asparagus on serving plate, broke up proscuitto up and sprinkled over, and sprinkled bread mix over top.
