Hi-octane minute (and a half!) steak with V8 salad

Ingredients
  • 1 Tbsp mixed peppercorns, cracked
  • 4 x 100g rump steaks, cut as thinly as possible
  • 1 carrot
  • 1 celery stick
  • 1 Lebanese cucumber
  • 1 punnet enoki mushrooms
  • 4 rice-paper sheets
  • 1/4 cup V8 juice
  • 1 tsp Tabasco
  • Juice of 1 lemon
  • 2 Tbsp olive oil
  • Salt and pepper, to taste

Here's an interesting and tasty way to enjoy steak - and it'll be ready in a flash!

Here's how: 

1 Put cracked peppercorns on a sheet of baking paper. Coat both sides of the steaks with cracked pepper. Heat a large, heavy-based pan until hot, then add the steaks and sear on each side.

2 Slice the carrot, celery and cucumber on a mandolin, using the julienne blade, then put the vegetables in a bowl. Add mushrooms and toss to combine. Put each rice-paper sheet in a bowl of warm water for 30 seconds, or until soft. Remove, then transfer to a clean tea towel. Arrange vegetables along the centre of each soft sheet, fold in the sides and wrap up.

3 Mix the V8 juice, Tabasco, lemon juice and oil and season lightly with salt and pepper. Spoon the V8 mixture over the steak and wraps to serve.
