Mussels in white wine

Ingredients
  • 2kg mussels, cleaned, de-bearded
  • 6 whole garlic cloves, peeled
  • 1 onion, finely sliced
  • 4 bay leaves
  • 750ml good quality white wine
  • 125g butter
  • Leaves from 1 bunch parsley
  • 1 punnet cherry tomatoes, halved

If you want to try something different, but what to be in and out of the kitchen in the flash, this recipe could fit the bill.

Here's how: 

1 Heat a large heavy-based pot. When hot, add the mussels, garlic, onion and bay leaves. Toss and cook for 1 minute. Add wine, cover and cook over a high heat for 4 minutes.

2 Add butter, parsley and tomatoes. Cook for 3 minutes, season with salt and pepper, then serve.
