A tropical take on fruit salad
Here's how
1. Place the watermelon, pineapple, mangoes, guava, papaya, lychees and kiwi fruit in a bowl and gently combine.
2. Place the lime juice, palm sugar, star anise, vanilla bean, pandanus leaf, lime zest and water in a saucepan and stir over a low heat until the sugar dissolves. Bring to the boil, reduce the heat and simmer for 10 minutes or until the syrup is reduced by half. Allow to cool slightly.
3. Pour the syrup over the fruit and refrigerate until cold.
