Verjuice

Verjuice is one of the trendiest ingredients on restaurant menus.

But what exactly is it?

Verjuice is a versatile vinegar alternative made from under-ripe grapes. In Australia, more wineries are now starting to make it. Unlike vinegar, which contains acetic acid (which can react badly with wine, making it taste sharp) verjuice contains tartaric acid, which is not as tart.

So it's great for:

  • salad dressings, especially if you're enjoying a glass of wine with your salad.
  • deglazing roasting pans to make a quick saucs.
  • substituting for lemon juice almost anywhere.

Drink recipe:
A slug of verjuice and a measure of gin over crushed ice and topped up with tonic.

Google 'verjuice' and there are plenty of responses, just like this one, with suggestions on how to use verjuice if you want to buy it for $10 a bottle. I want to MAKE the verjuice myself from the grapes we never get to eat anyway, because the birds take them before we can pick them!
